Guacamole

 

Instructions

1. Chop the onions, tomato, garlic, and chilli and set to one side

2.  Prepare the avocados by removing and discarding the skins and stones. Place the avocados into a mixing bowl and finely chop to create a chunky mixture.

3.  Add the lime juice, followed by the onion, garlic, tomato, and chillies. Mix well, stir in the chopped coriander, and salt to taste.

 

Ingredients

3 large Avocados, ripe

½ Lime, juice , or lemon

1 clove garlic

½ Onion, finely chopped

6 cherry or baby plum tomatoes ( or any equivalent)  finely chopped ( I like the seeds)

1 Red Chilli, deseeded and finely chopped

Large handful chopped Coriander, chopped, plus extra to garnish

1 tsp olive oil

Sea/Rock salt to taste
