Plaice with Lemon Herb Crust
A light and extremely healthy meal that can be prepared in under half an hour, saving on time but not taste or goodness!
25 minutes Serves 4
4 fillets Plaice (or similar white fish)
4 tbsps breadcrumbs
1 tbsp fresh chopped parsley
1 tsp fresh chopped thyme
Rind one lemon finely grated
2tbsp grated parmesan
1 egg lightly beaten
- Pre heat oven to 180 degrees
- In a bowl combine the breadcrumbs, parmesan, fresh herbs and lemon rind
- In a second bowl add the egg, lightly beaten
- Place the fish first in the egg (ensure it is covered all over) and then coat in the breadcrumbs.
- Transfer to a lightly oiled baking dish and place in the oven for 10 minutes until starting to brown. Alternatively fry for a couple of minutes each side in a pan of olive oil over a medium heat
- Serve immediately with fresh vegetables

Thyme
Although thyme has a long history of use in natural medicine it is only recently, that researchers have isolated some of the components in thyme that bring about its healing effects.
